My tomato soup

Tonight for dinner I had a simple, yet very tasty, tomato soup!

Here's the recipe...

Ingredients (for one):
Extra-virgin olive oil
1/2 medium onion, sliced
1 medium potatoe, cubed
1 celery rib, chopped
half can of chopped tomatoes
350 ml (approx) vegetable stock

Heat oil in a medium pan, sautè the sliced onion then add the celery and the potato cubes stirring for 5 minutes. Add the chopped tomatoes and the stock. Cook gently for 20 minutes or until the cubes of potatoe are tender. Blend until smooth. 

You can use fresh tomatoes, but they should really be ripe and red. Before using them remember to peel and deseed them.
